Porcini Brocolli Quinoa Pilaf

Warm earthy flavor for this very satisfying pilaf. Showing this as a side dish but a double helping would make a very excellent main dish.
Ingredients:
* 1/2 cup organic quinoa
* 10 pieces dried porcini mushrooms
* 1 cup brocolli florets (no sauce)
* 1 cup water
* 1/4 cup fresh mint
* 1 tsp real iodized salt
* 1/2 tsp cayenne pepper
* 1/2 tsp ground black pepper
* 1 tsp onion powder
Directions:
1. Soak the dried mushrooms in 1 cup warm water for at least an hour.
2. Cut the mushrooms into bite size pieces.
3. In the pot you will use to boil the rest, pour in the quinoa seed and let them toast up for about 5 minutes.
4. Pour the mushroom water plus plain water as needed to get 1 cup into a pot over the Quinoa and bring to boil.
5. Stir in salt, cayenne, black pepper and onion powder, stir again.
6. Cover and reduce heat and let simmer for about 15 minutes.
7. Add the brocolli florettes, mushrooms and chopped mint to the quinoa, cover and let simmer for another 10 minutes.
