Ingredients:

Directions:

  1. In a large heavy skillet, cook the bacon over medium heat until crisp, transfer to a paper-lined plate
  2. Drain off all but 1/4 cup fat, return to heat and add the celery and onion, cook 5 minutes
  3. Add the tomatoes, tuna (and the water its packed in), tomato paste, jalapeno, and 1 cup water
  4. Simmer until thickened, about 20 minutes
  5. Whisk in the file powder and remove from heat
  6. Serve the gumbo over the rice and crumble the bacon on top
