Ingredients:

  • 1 unbaked 9 inch pie shell , we did not use this
  • 1 cup cheddar cheese , shredded - again as low fat as possible
  • 1 cup montererrey jack cheese, shredded - low fat also
  • 3/4 cup pepperoni pieces, we made 1 with this and 1 without as i am not fond of pepperioni, we used italian sausage in mine, yes i know it has lots of fat
  • 1 tbsp olive oil
  • 1/2 cup onion , finely chopped - we used red to add color to the quiche
  • 2 cloves garlic, minced
  • 1 cup whole milk - we used 1 percent and it worked out fine
  • 3 eggs
  • 1 tsp italian seasoning
  • we also used pizza sauce with lots of veggies in it to top the quiche with before serving, the kids thought it was the cats meow! but this is just an option.

Directions:

  1. Preheat the oven to 400 degrees f.
  2. Sprinkle cheeses in bottom of the pie crust.
  3. Tope with pepperoni and mushrooms.
  4. In a heavy skillet, saute the onions and garlic in the olive oil until crisp tender.
  5. Spoon over the mushrooms in the pie crust.
  6. In a medium bowl, combine milk, eggs, and italian seasoning until well blended and pour gently over the other stuff in the pie crust (or just the smal casserole dish for us).
  7. Bake quiche at 400 degrees for 40 to 45 minutes or until a knife inserted near the center comes out clean. Just like any other custard...
  8. Let stand 10 minutes before serving.
  9. Slice it pretty and we served it with a little bit of pizza sauce on it and a side salad wit h fat free dressing. it was to good to be real!
