Ingredients:

Directions:

  1. Put oil in a nonstick skillet over medium heat.
  2. Peel and cut onion in sixths then peel garlic.
  3. Put both in a food processor and pulse until chopped.
  4. Add to skillet and increase heat to medium high.
  5. Drain bell peppers from jar then chop coarsely.
  6. Drain tomatoes then coarsely chop ham.
  7. Add peppers, tomatoes, ham, herbes de Provence, salt and pepper to skillet.
  8. Stir well and cook until almost all moisture has evaporated about 7 minutes.
  9. Turn heat down to medium.
  10. Meanwhile chop parsley.
  11. Beat eggs with salt and pepper.
  12. Add eggs to skillet and stir until they begin to thicken.
  13. Stir in parsley then serve from pan.
