Pineapple Snack Cake

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1/3 cup milk
  • 1/3 cup firmly packed brown sugar

Directions:

  1. Preheat oven to 350.
  2. Drain pineapple, reserving 1/3 cup juice.
  3. Set aside.
  4. Combine flour and next 3 ingredients; make a well in the center.
  5. Combine the reserved juice, milk and next 3 ingredients.
  6. Add wet to dry ingredients, stirring just until moistened.
  7. Spoon into a greased 9' square pan.
  8. Top with pineapple and then sprinkle with brown sugar.
  9. Bake for 25- 30 minutes.
  10. Cool in pan on wire rack for 10 minutes.
