Pineapple Pork Chops and Rice

Ingredients:

  • 8 1/4 inches thick pork chops
  • 2 tbsp butter or 2 tbsp margarine
  • 1 cup water
  • 1 1/3 cups minute rice
  • 1 (8 oz) can crushed pineapple
  • 3/4 tsp salt
  • salt and pepper

Directions:

  1. Sprinkle porkchops with salt and pepper to taste.
  2. Brown chops well on both sides in butter in a large skillet.
  3. Add pineapple and juice.
  4. Reduce heat , cover and simmer for 20min or until tender.
  5. Stack the chops to one side of skillet.
  6. Add water and salt.
  7. Bring to a boil then stir in rice.
  8. Cover and remove from the heat.
  9. Let stand 5 minutes.
