Pineapple Oatmeal Bars

Ingredients:

  • 1 1/2 cups sugar
  • 2 tbsp cornstarch
  • 1 1/2 tsp lemon juice
  • 2 1/4 cups flour
  • 1 1/2 cups brown sugar , packed
  • 3/4 tsp baking soda
  • 1 cup & 2 tsp butter

Directions:

  1. Filling-Simmer first 4 ingredients over medium heat, until thick.
  2. Remove from stove and cool.
  3. Crust- Combine dry ingredients and cut in butter. Blend until crumbly.
  4. Press 2/3 of the mixture firmly in a 9 x 13 pan. Add filling and
  5. Sprinkle remaining crust over the filling.
  6. Bake 350° for 30 minutes.
