Ingredients:

  • 1/4 lb bacon, diced
  • 1/4 cup butter
  • 2 large onions, diced
  • 1 cup white wine
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp paprika
  • 1 pinch nutmeg
  • 1 pinch mace
  • 1 1/2 tbsp fresh lemon juice
  • 2 sprigs parsley

Directions:

  1. Clean mushrooms and slice in half if large.
  2. Pat dry.
  3. Fry bacon in a large pan until lightly browned.
  4. Remove from pan and reserve.
  5. Add the butter to the pan drippings.
  6. Add onions; saute until lightly browned.
  7. Add mushrooms; cook until tender, stirring often.
  8. Stir in wine, salt, pepper, paprika, nutmeg, and mace.
  9. Cover frypan and cook over low heat 15 minutes.
  10. Off the heat, add the cooked bacon, cream and lemon juice.
  11. Reheat until just warm.
  12. Do NOT let the mixture boil!
  13. Garnish with parsley and serve with noodles or dumplings.
