Ingredients:

  • 30 small eggs
  • 1 1/2 cups water
  • 1 tsp salt
  • 1 medium onion, sliced thin
  • 1 tsp red pepper flakes (optional)
  • 1 1/2 cups white vinegar

Directions:

  1. Hard boil and peel eggs.
  2. Bring water, salt, onion, mustard seed, pepper flakes (if using) to a boil.
  3. Simmer for five minutes.
  4. Add vinegar and return to a boil.
  5. In large glass canning jar, layer eggs, onions and brine.
  6. Let sit in refrigerator for three days before using.
