Ingredients:

Directions:

  1. In a Dutch oven, break up chorizo with a spoon and cook over medium heat, stirring occasionally, 5 minutes. Add onion and cook, stirring, until softened, 2-3 minutes.
  2. Stir in garlic, chicken broth, tomatoes with their liquid, water, bay leaf, ginger, chicken, garbanzo beans, sweet potatoes and rice. Heat to simmering over medium-high heat.
  3. Reduce heat to medium-low. Cover and simmer 40 minutes.
  4. Stir in bok choy and bananas. Cover and cook 10-15 minutes. Serve in bowls, with a sprinkling of scallions.
