Ingredients:

Directions:

  1. Wash/scrub well and peel any bad spots, leaving most of peel
  2. Quarter potatoes, chop more if desired
  3. Dry potatoes with a paper towel
  4. Place in a 2 quart casserole dish
  5. Add olive oil, cilantro, garlic powder, salt and pepper
  6. Toss until evenly coated
  7. Bake in 350 degree oven 30-40 minutes until browning and soft, turning once halfway through
