Ingredients:

  • 1 egg
  • 1/2 tsp pepperemint extract
  • cornstarch for dusting
  • 1 16 oz bag chocolate chips

Directions:

  1. In a med. bowl beat egg white until it is stiff and forms peaks
  2. Slowly add the sugar using an electric mixer
  3. Add the corn syrup and peppermint extract
  4. Knead mixture with your hands until it has the smooth consistency of dough
  5. Using a rolling pin dust with cornstarch and roll out dough 1/4 inch thick
  6. Punch out circles of peppermint dough using a cutter or can with a diameter of about 2-21/2 inches
  7. Place in fridge to firm up(45 mins.)
  8. Melt the chocolate chips in the microwave set on high for 2 mins. stirring halfway through the heating time
  9. Drop each patty into the chocolate and coat completely
  10. Using 2 forks(one in each hand) lift out of the chocolate and place on wax paper
  11. Chill peppermint patties until firm (about 30 mins)
  12. Makes about 20 patties
