Peppermint Brownie Pie

Ingredients:

  • pastry for 9-inch single- crust pie
  • 1 1/2 cups sugar
  • 1 tsp vanilla
  • 1 cup mint-flavored semi-sweet chocolate pieces
  • whipped cream
  • layered chocolate mint candies, optional

Directions:

  1. FOR FILLING
  2. In a small heavy saucepan, melt butter and unsweetened chocolate over low heat, stirring frequently
  3. Let cool 20 minutes
  4. Roll out pastry
  5. Line a 9-inch pie plate with pastry; trim and crimp edge
  6. In a mixing bowl, mix eggs, sugar, flour and vanilla
  7. Stir in chocolate mixture and chocolate pieces
  8. Pour into pastry lined pie plate
  9. Bake in a 350 degree oven about 55 minutes or until filling is evenly puffed and edges of filling are slightly cracked
  10. Cool on wire rack (center will sink slightly as pie cools)
  11. Serve with whipped cream and if you like, shaved candies
  12. If you can't find the mint chocolate pieces, use regular chocolate chips and add 1/2 teaspoon peppermint extract to the batter
