Peppermint Brownie Sandwiches

Ingredients:

  • 1 package (about 1 lb) brownie mix
  • 2 tbsp cocoa
  • peppermint buttercream recipe
  • 1/2 cup soft butter
  • 1/4 tsp peppermint extract
  • few drops of red food coloring (optional)
  • makes 3/4 cup.

Directions:

  1. Prepare two 8- inch-square pans as directed on package of Brownie mix
  2. Make the brownies according to the directions on box, but add the cocoa to the dry ingredients and stir in the vanilla with the liquid ingredients.
  3. Spread the batter thinly and as equaly as possible in the 2 pans.
  4. Bake according to the directions on the package, but remember that thin brownies will take less time to bake.
  5. Cool and remove from pans
  6. Blend the first 3 ingredients from Peppermint Buttercream recipe
  7. Stir over low heat until creamy
  8. Add peppermint.
  9. Spread the Peppermint Buttercream onto one brownie layer, top with other brownie layer and cut into bars.
