Ingredients:

Directions:

  1. Cook pasta according to package directions, omitting salt and fat.
  2. Reserve 3 tablespoons pasta water; drain pasta.
  3. Combine reserve pasta water, 1 teaspoon olive oil, and lemon juice in a small bowl; set aside.
  4. While pasta cooks, place a large skillet over medium-high heat until hot.
  5. Add almonds and cook; stirring constantly, 1-2 minutes or until toasted.
  6. Set almonds aside.
  7. Coat skillet with cooking spray; add remaining 1 teaspoon olive oil.
  8. Return to medium-high heat until oil is hot.
  9. Cut onion slices in half; add onion and garlic to skillet.
  10. Cook, stirring constantly, 4 minutes or until tender.
  11. Add spinach, and cook, stirring constantly, 2 minutes; stir in almonds, salt, and pepper.
  12. Stir in reserve pasta water mixture.
  13. Add pasta, and toss gently.
  14. Serve immediately.
