Pecan Banana Bread French Toast

Ingredients:

Directions:

  1. Preheat oven to 350 then generously butter a loaf pan.
  2. Sift first 3 ingredients into a small bowl.
  3. Using an electric mixer cream butter in a large bowl until light then gradually beat in sugar.
  4. Beat in eggs one at a time then add mashed bananas and lemon juice and beat until well blended.
  5. Mix in dry ingredients alternately with milk beginning and ending with dry ingredients.
  6. Mix in pecans then pour batter into prepared pan.
  7. Bake until toothpick inserted in center comes out clean about 1 hour 20 minutes.
  8. Cool in pan on rack for 10 minutes then turn out onto rack and cool completely.
  9. Cut bread into thick slices.
  10. Preheat oven to low.
  11. Whisk eggs, cream, sugar, vanilla, and spices in a large bowl until blended.
  12. Melt 1 tablespoons butter in a heavy large skillet over medium heat.
  13. Place some bread in the batter and turn to coat thoroughly.
  14. Add bread to skillet then cook until golden brown about 3 minutes per side.
  15. Transfer toast to a cookie sheet then place in oven to keep warm.
  16. Repeat with remaining bread slices and batter in batches adding more butter to skillet as necessary.
  17. Serve toast with maple syrup.
