Pear Almond Cake With Chocolate Chunks

Ingredients:

Directions:

  1. Preheat oven to 375 degrees F.
  2. Grease and flour a 9 inch cakepan or springform pan.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a larger bowl, whisk together 3/4 cup sugar and 2 eggs until pale yellow, about 2 minutes.
  5. Whisk in butter.
  6. Stir flour mixture in until just combined, don't over-mix.
  7. Pour half of the mixture in pan, top with half the pear slices and half the chocolate; then pour the rest of the mixture and top with remaining pears and chocolate.
  8. In a food processor, grind 1/4 cup almonds with the remaining 1/4 cup sugar; add egg white and process until smooth.
  9. Drizzle almond mixture over cake, then sprinkle with remaining almond slices.
  10. Bake until a toothpick inserted in center comes out clean, 45 to 50 minutes.
  11. Let cool slightly, then dust with Confectioners' sugar.
