Peanut Butter and Jam Cookies

Ingredients:

  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda

Directions:

  1. Preheat oven to 350°F.
  2. In large bowl, cream together butter, peanut butter, and sugars.
  3. Add egg and vanilla, mix until smooth.
  4. In a small bowl, mix flour, salt and baking soda.
  5. Stir into butter mixture until completely blended.
  6. Form dough into balls and flatten with thumb, on cookie sheet, to make a well.
  7. Drop 1 tsp of jam into each well.
  8. Bake until lightly browned around the edges, 10-12 minutes.
  9. Let cool on cookie sheet for 1 min before removing.
