Ingredients:

Directions:

  1. Trim Brussels sprouts and halve lengthwise.
  2. In a large cast iron skillet, melt 2-1/2 Tbsp butter over moderate heat and cook the garlic until golden brown. Transfer garlic to a small bowl with a slotted spoon.
  3. Reduce heat to low, arrange sprout in skillet cut side down in one layer.
  4. Sprinkle sprouts with the pine nuts and salt to taste.
  5. Cook sprouts until crisp-tender and undersides are golden brown, without turning, ~ 15 minutes.
  6. Transfer sprouts to a plate, with tongs, browned side up.
  7. Add garlic and 1 Tbsp of butter to skillet and cook over moderate heat, stirring, until pine nuts are an even pale gold, ~ 1 minute.
  8. Spoon mixture over sprouts and sprinkle with freshly ground pepper.
