Pacfic Rim Shrimp Curry

Ingredients:

  • 1 1/2 lbs raw shrimp
  • 1/8 cup red pepper
  • 1/8 cup green pepper
  • 1/8 cup yellow pepper
  • 1/4 cup onion
  • 1/4 cup celery
  • 2 tbsp curry powder
  • 3 tbsp butter
  • 1/4 tsp. grated nutmeg
  • 1 cup white wine
  • 1 lb cashews
  • 1/4 cup scallion

Directions:

  1. Melt butter.
  2. Saute onion,celery,peppers,curry,and nutmeg.
  3. Add.
  4. Wine.
  5. Papaya nectar.
  6. Shrimp.
  7. Simmer on low heat for 15-20 minute.
  8. *serve over jasmine rice. top with fine chopped cilantro - .
