Oyster Chowder With Bacon And Spinach

Ingredients:

  • 3 slices bacon, diced
  • 1/2 cup diced onion
  • 3 tbsp butter
  • 4 tbsp flour
  • 1 1/2 cups chicken broth
  • 20 to 24 oz oysters with their liquor
  • 1 cup tightly packed chopped spinach leaves, about 3 to 4 oz
  • 2 cups heavy cream
  • 1 tsp sea salt
  • dash nutmeg
  • 1 tbsp dry sherry , optional

Directions:

  1. In a large saucepan, cook the bacon over medium-low heat until fat is rendered.
  2. Add the butter, celery, and onion; continue cooking, stirring, until vegetables are tender.
  3. Stir in flour until well blended.
  4. Add chicken broth, oysters with liquid, and spinach.
  5. Continue cooking until spinach is wilted.
  6. Add cream and seasonings; heat through.
  7. Stir in sherry.
