Overnight Berry Breakfast Pudding

Ingredients:

Directions:

  1. Combine berries, orange juice, honey and salt in medium bowl.
  2. Toss to combine. Let rest at least 15 minutes to render some juices from the berries. See Photo
  3. With 1 cup ramekins, or similar, use as a mold to cut bread slices to fit. See Photo
  4. Add enough berries to cover bottom of ramekin in single layer. See Photo
  5. Add a thin layer of yogurt to just cover berries. See Photo
  6. Add sprinkling of fresh nutmeg, if using
  7. Add bread round and push down against the yogurt.
  8. Repeat, ending with a bread round.
  9. Spoon a bit of the remaining juice from the berries over last bread round. See Photo
  10. Cover with plastic wrap and weight down with a full canned product. See Photo
  11. Refrigerate overnight, or at least 4 hours.
  12. To serve, remove plastic wrap and lightly run a knife or toothpick along edge of ramekin.
  13. Invert serving plate over the top and carefully flip over.
  14. Gently tap the ramekin, if needed, to loosen, but they should come out easily. If not, then run your knife further down the ramekin.
