Oven Fried Rabbit with Potato Chips

Ingredients:

  • 2 cup finely crushed potato chips
  • 1/4 cup butter
  • 1 fryer-broiler rabbit cut in serving pieces (about 2-2 1/2 lb.)

Directions:

  1. Dip rabbit pieces in beaten egg, then coat with potato chips. Melt butter in shallow pan. Arrange rabbit pieces in pan and bake in 375 degree oven for 30 minutes. Turn rabbit and bake another 30 minutes or until well done. What you've got is fried rabbit without all the grease.
