Orzo with Shrimp & Feta

Ingredients:

  • 1 1/2 cup orzo
  • 1 tbsp butter
  • 1 1/4 lb shrimp
  • 2 medium tomatoes

Directions:

  1. Boil orzo as label directs
  2. Melt butter over medium heat
  3. Add shrimp, salt and pepper and cook 3 to 5 minutes
  4. Add tomatoes and cook 30 seconds, stirring
  5. Remove from heat
  6. Drain orzo
  7. Toss with shrimp mixture and feta
