Orange Pecan French Toast With Sauce

Ingredients:

  • 4 eggs
  • 2/3 cup orange juice
  • 1/3 cup milk
  • 1 tbsp vanilla
  • 1/2 tsp nutmeg
  • 1/4 cup sugar
  • 8 slices of italian or french bread- 1/2 thick
  • 1/4 cup butter
  • 1/2 cup chopped pecans or 5 halves per slice
  • orange syrup - ingredients
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/3 cup (3 oz.) orange juice concentrate

Directions:

  1. Beat eggs, juice, milk, sugar, vanilla and nutmeg together to combine.
  2. In a 9 X 13 inch pan, arrange 8 slices of bread in a single layer. Pour egg mixture over bread. Cover with plastic wrap and refrigerate overnight or 2-24 hours.
  3. Prior to baking. Place butter in 15 X 10 inch pan and place in oven to melt over bottom surface of pan. Place slices in buttered pan, place pecans on top. Bake at 350° for 25 minutes. (till golden brown) Serve with orange syrup.

  5. Prepare Orange Syrup. Combine butter, sugar, and orange juice concentrate in a saucepan over low heat until melted. Do Not Boil. Remove from heat and cool 10 minutes. Using a mixer or wisk, beat till smooth. Serve Warm. Pour over Orange Pecan French Toast. Makes 3/4 cup.
