Orange Glazed Poppy Loaf

Ingredients:

  • 3 cups flour
  • 1 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 2 1/4 cup sugar
  • 1 1/2 tbsp poppy seeds
  • 3 eggs
  • 1 1/2 cup milk
  • 1 1/8 cup oil
  • 1 1/2 tsp vanilla
  • 1 1/2 tsp almond extract
  • glaze : 1/4 cup orange juice
  • 3/4 cup white sugar
  • 1/2 tsp vanilla

Directions:

  1. Mix the first 7 ingredients together for one to two minutes with an electric mixer.
  2. Pour in 2 lightly greased loaf pans or 1 bundt pan.
  3. Bake 1 hr. at 350 degrees or until toothpick comes out clean. Top will crack.
  4. GLAZE: Heat all the glaze ingredients until the sugar has dissolved.
  5. Let cake/loaves cool about 5 minutes.
  6. Brush or pour glaze over warm cake.
  7. This gets even better after it's been frozen; it gets really moist.
  8. For mini-loaves, bake about 45 minutes.
