Orange Filled Biscuits

Ingredients:

  • 3 tbsp. sugar
  • 1 teasp. finely grated orange rind
  • 1/4 cup butter
  • 1 tbsp. + 3/4 teasp. all-purpose flour
  • 1/4 cup orange juice
  • 1 1/4 teasp. finely grated orange rind
  • 1/4 cup sugar

Directions:

  1. For the FILLING:
  2. In a heavy sauce pan melt butter..
  3. Add flour and cook 1 minute, stirring constantly
  4. Gradually add orange juice, cook over medium heat until thickened
  5. Stir in grated orange rind and the sugar
  6. Chill the mixture thoroughly
  7. Yields 2/3 cups

  9. For BISCUITS:
  10. Combine the flour, sugar, orange rind, and the whipping cream
  11. Stir with a fork until blended
  12. Turn dough out onto a lightly floured board.. and knead 10 - 12 times
  13. Roll dough into a 12 x 8-inch rectangle
  14. Spread with the orange filling
  15. Roll up jellyroll fashion, starting at the long end
  16. Pinch seam and the ends together
  17. Slice roll into 1-inch pieces and place in greased and floured muffin pans
  18. Bake at 425' F for 15 - 20 minutes
  19. Remove from pans immediately and brush with melted butter
  20. Yields: 12
