Ingredients:

Directions:

  1. Grind the pecans with the flour, sugar, baking powder, 1/2t. salt & nutmeg in a food processor or blender until fine as possible.
  2. Add 2t. of the grated orange rind & pulse a few more times.
  3. Transfer everything to a big bowl.
  4. Whicks together the eggs and cooled butter in a small bowl.
  5. Add this to pecan mixture.
  6. Whisk in seltzer.
  7. Cook waffles on waffle iron according to the directions for your model.
  8. Meanwhile, gently heat together the maple syrup, orange juice, lemon juice, the remaining 1/2t. orange rind and the salt.
  9. Serve syrup with waffles.
