Ingredients:

Directions:

  1. In a bowl coat tomatoes with olive oil and salt and pepper
  2. Cook on cookie sheet in 400 dgree oven for 30 minutes, shaking the pan about every 10 minutes
  3. Cook rice to package directions (using chicken broth not water), along with garlic. Remove garlic before adding next ingred
  4. When rice is down add onions , tomatoes and cheese
  5. Salt and freshly ground black pepper
  6. Enjoy
  7. If your rice is a bit sticky add a few splashes of high quality olive oil
