Olga's Lemon Butter

Ingredients:

  • 1/2 lb butter (don'tsp substitute)
  • 1 cup sugar
  • 3 eggs

Directions:

  1. Combinbe sugar and butter in double boiler and let melt.
  2. Beat eggs well and add strained lemon juice.
  3. When butter is melted, add lemon juice mixture and beat well.
  4. Cook 20 minutes.
  5. Store in container in frig.
  6. Let sit at room temperature before filling tart shells. Add a dollop of whipped cream if desired.
