Old Fashioned Raisin Pie II

Ingredients:

  • 1 (9 inch) pie crust, baked
  • 2 cups water
  • 1 1/2 cups raisins
  • 3/4 cup white sugar
  • 1/8 tsp salt
  • 2 tbsp cornstarch
  • 1/4 cup water
  • 1 tbsp lemon juice

Directions:

  1. In a medium saucepan combine 2 cups water, raisins, sugar, and salt. Bring to a boil, stirring occasionally. Reduce heat and simmer 5 minutes.
  2. While raisin mixture is simmering, dissolve cornstarch in 1/4 cup water. Stir cornstarch mixture into raisins and boil one minute. Remove from heat.
  3. Stir lemon juice into raisin filling. Pour mixture into baked pie shell. Chill before serving.
