Old Fashioned Lemon Meringue Pie

Ingredients:

  1. Preheat oven 150c gas 2
  2. TRADITIONAL
  3. Mix together in a bowl cornflour grated rind and juice of the lemons
  4. Pour the boiling water onto the mixture, return to the pan and stir over heat for about 2-3 minutes until thick
  5. Remove from heat, beat in the caster sugar the 4 egg yolks and the knob of butter
  6. Cool
  7. Cover with meringue topping
  8. -
  9. FARMHOUSE LEMON CURD
  10. Melt the butter, 12oz of sugar juice and lemon grated rind in the top of a double saucepan over boiling water
  11. Add the beaten eggs +2 yolks
  12. Stir until thick
  13. Cool
  14. Cover with meringue topping
  15. -
  16. MERINGUE TOPPING
  17. Whisk the 4 egg whites until stiff add 7oz of sugar gradually whisk again for a short while until the meringue mix is stiff
  18. Spoon or pipe over the lemon filling
  19. Cook for 20 minutes until pale beige
  20. For an original version, mix 1/2pint of double whipped cream with the lemon curd, and decorate with a border of tiny cooked meringues
