Old Fashioned Banana Bread Pudding

Ingredients:

  • 1/4 cup butter or 1/4 cup margarine
  • 4 cups french bread
  • 3 eggs
  • 1/2 cup sugar
  • 2 cups milk
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 2 tsp vanilla
  • 3 tbsp butter or 3 tbsp margarine
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 3/4 cup milk
  • 1 tsp vanilla

Directions:

  1. Heat oven to 375*F.
  2. In a 2-quart casserole melt 1/4 cup butter in oven for 4 to 6 minutes.
  3. Stir in bread cubes.
  4. In medium bowl slightly beat eggs, stir in remaining pudding ingredients except bananas .
  5. Stir in bananas.
  6. Pour over bread cubes, stir to coat.
  7. Bake for 40 to 50 minutes or until a knife inserted near center comes out clean.
  8. Meanwhile in a 1 quart saucepan melt 3 tablespoons butter over medium heat.
  9. Stir in sugar and cornstarch, add remaining ingredients except for vanilla .
  10. Continue cooking, stirring occasionally until sauce come to a full boil, about 3 to 4 minutes.
  11. Stir in vanilla.
  12. Serve sauce over warm pudding.
