Ingredients:

Directions:

  1. Preheat oven to 400 degrees.
  2. Place frozen potatoes in microwave and cook on High for 30 seconds.
  3. Spread potatoes evenly in 9-inch glass pie plate that has been sprayed with nonstick cooking spray.
  4. Sprinkle potatoes with salt and pepper to taste.
  5. Spread cheese evenly over potatoes.
  6. Spread broccoli evenly over cheese.
  7. Beat eggs well with water.
  8. Pour carefully over broccoli.
  9. Bake for 30-35 minutes, or until center is set and top is golden brown.
  10. Serves 4.
  11. NOTE: This recipe tested at high altitude (over 3,500 feet).
  12. Your cooking time may be shorter.
