Ingredients:

  • 1 1/2 cups light brown sugar
  • 1 cup salad oil
  • 1 tbsp vanilla
  • 2 large eggs
  • 2 cups flour
  • 1 1/2 tsp baking soda
  • 1 tsp salt

Directions:

  1. Preheat oven to 375°F.
  2. In a large bowl, with mixer at medium speed, beat brown sugar, salad oil, vanilla, and eggs until smooth.
  3. With mixer at low speed, beat in flour, baking soda and salt until blended.
  4. With a spoon, stir in oats.
  5. Place sugar in a bowl.
  6. Roll level tablespoons dough into balls; roll ball in sugar and place on a large greased cookie sheet, about 2 inches apart.
  7. Bake about 10 minutes or until golden, remove to wire racks to cool.
  8. Store cookies in a tightly covered container.
