Oatmeal Coconut Chocolate Chip Cookies

Ingredients:

  • 1 cup brown sugar , packed
  • 6 tbsp sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla
  • 1/2 tsp salt (optional)
  • 1/2 tsp baking soda
  • 1 cup flour
  • 2 1/2 cups oatmeal ( rolled oats)
  • 1 1/2 cups coconut (more or less to taste if you'd like)

Directions:

  1. Preheat oven to 325F.
  2. Beat butter and sugars together at High speed until fluffy.
  3. Add eggs and beat on medium speed until blended.
  4. Beat in vanilla, baking soda and salt until mixed in fully.
  5. Add flour and mix at low speed until blended.
  6. Stir in oats, coconut and chocolate using spoon.
  7. Arrange in mounds on baking sheets. Pat down if desired.
  8. Cook 12-14 minutes.
  9. Cool one minute before transferring to cooling rack.
