Ingredients:

Directions:

  1. Preparation for Oatmeal Cake:
  2. Pour 3/4 cups boiling water over 1/2 cup oats and set
  3. Aside until cool. Once cooled, mix in 1/4 cup
  4. Vegetable oil, 1/2 cup brown sugar, 1/2 cup white
  5. Sugar, and 1 egg.
  6. In another bowl, sift together 3/4 cups plain flour,
  7. 1/2 teaspoon baking soda, 1/4 teaspoon cinnamon, and
  8. 1/4 teaspoon salt. Mix sifted ingredients into the
  9. Oatmeal mixture. Mix thoroughly. Pour batter into
  10. Greased and floured 8-inch square baking pan. Bake at
  11. 350 degrees for 40 minutes.
  12. Preparation for Caramel Icing:
  13. In a saucepan over medium heat, bring 1/2 cup brown
  14. Sugar, 1/4 cup condensed milk and 1/4 stick butter or
  15. Margarine to a boil. Boil for 5 minutes. Remove from
  16. Heat and stir in 1/4 cup coconut and 1/4 cup nuts. Mix
  17. Thoroughly and pour over cake.
  18. Serves: 8
