Ingredients:

  • 1-1/2 cups boiling water
  • 1/2 cup butter
  • 1 cup packed brown sugar
  • 2 eggs
  • 1-1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • topping
  • 1/4 cup packed brown sugar
  • 1/2 cup white sugar
  • 1-1/3 cups flaked coconut
  • 1/4 tsp. vanilla extract
  • 1/4 cup cream

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease a 9 x 13 pan.
  3. In a small bowl, pour boiling water over oats.
  4. Mix well, and allow to cool.
  5. In a large bowl, combine 1/2 cup butter/margarine, 1 cup brown sugar, 1 cup white sugar, 2 eggs, 1-1/2 cups flour, 1 tsp. baking soda, spices, and 1/2 tsp. salt.
  6. Add cooled oatmeal mixture, and stir to combine.
  7. Pour batter into prepared pan.
  8. Bake for approximately 35 minutes or until cake tester comes out clean.
  9. While cake is baking, combine 1/4 cup brown sugar, 1/2 cup white sugar, 1-1/3 cups coconut, 7 Tbsp. melted butter/margarine, 1/4 tsp. vanilla, and 1/4 cup cream in a mixing bowl.
  10. Remove cake from oven, and turn on broiler.
  11. Drop mixture by small spoonfuls on top of cake.
  12. Spread evenly and carefully over cake.
  13. Broil for 2 to 5 minutes, until topping is bubbling and lightly browned.
  14. Makes one 9 x 13 cake
