Nutty Cranberry Scones

Ingredients:

  • 2 cups flour
  • 1/2 cup sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup minus 2 tbsp buttermilk
  • 1 egg
  • 1 tsp vanilla

Directions:

  1. Mix dry ingredients well.
  2. Cut in butter until the mixture resembles coarse pebbles.
  3. Beat together egg, vanilla, and buttermilk, then add to dry ingredients and mix briefly (do not overmix dough).
  4. Add walnuts and dried cranberries then mix briefly.
  5. Turn dough out on well-floured cutting board. Knead briefly, working in enough flour to make a stiff dough.
  6. Shape into rectangle about 1 1/2 inches thick. Cut into 12 squares.
  7. Bake at 400F for 20 minutes.
