Nut Koftas With Minted Yoghurt

Ingredients:

Directions:

  1. Heat 3 tbsp of the oil in a pan and fry onion for 5 minutes. Add chili, garlic and curry paste and mix well.
  2. Place onion mix, beans, almonds, egg and seasoning in a processor and blend until mixture comes together.
  3. Flour your hands and divide the mixture into 8. Take a portion and form it into a sausage shape around one of the skewers. Repeat with the remaining mixture.
  4. Brush with the remaining oil and grill under a moderate grill until golden, turning once.
  5. Mix the yoghurt and mint together.
  6. Mix the lemon juice and oil together, season if desired.
  7. Brush the koftas with the lemon oil and serve with the yoghurt.
