Ingredients:

Directions:

  1. Grate cheese.
  2. Add creme cheese and bring all cheeses to room temperature.
  3. Add 1/2 cup sour creme and mix well.
  4. Add 5 pieces of the bacon, onion, 1/4 c pecans, undrained pimentos, relish, salt and pepper, mix until well combined.
  5. Cover and chill several hours.
  6. Meanwhile, combine remaining bacon, pecans, parsley, and the poppy seed.
  7. Shape cheese into a ball and roll in bacon mixture.
  8. Wrap tightly and chill.
