Norwegian Lingonberry Cake

Ingredients:

  • scant 2 cups (4-1/2 dl) flour
  • 2/3 cup (1-1/2 dl ) granulated sugar
  • note: i like to add 1/2 tsp. ground cardamon but the original recipe does not call for it. i also like to mix a handful of golden raisins(soaked in brandy) with the lingonberry preserves. if you do not wish to soak the raisins in brandy then i have also soaked them in apple cider. this is my personal addition.
  • a scant 2/3 cup (150 g / 5 oz, ) unsalted butter
  • 1 egg
  • 2/3 cup (1-1/2 dl ) oatmeal
  • 3 tbsp butter
  • 1/2 cup (1 dl ) granulated sugar

Directions:

  1. Preheat the oven to 200 degrees C (400 degrees F).
  2. Combine flour, sugar, and baking powder then cut in the butter with pastry blender.
  3. Add egg and mix well.
  4. Spread into a greased 8 x 12 pan.
  5. Spread the preserves over the batter.
  6. Bake 25-30 minutes or until golden.
  7. Cool in the pan.
