Ingredients:

  • for 6-8 yorkshire puddings (muffin tin size)
  • you want to take 3 eggs , break into a jug
  • now you want the same amount of flour as the eggs
  • and the same amount of milk
  • pinch of salt
  • 2 tbsp cold water

Directions:

  1. Beat the eggs, flour, milk and salt till light and frothy
  2. Let stand for at least an hour at room temp.
  3. Using, beef drippings or oil, pop a bit into each muffin pan and into a very hot oven (400F or 200C) till the fat is smoking, about 8min.
  4. Meanwhile stir batter again while adding 2 tablespoons cold water
  5. Pour into hot muffin pans up to 2/3 full and pop into hot oven for about 25-30 min or until well risen and golden brown
  6. Serve with your roast and veg with lashings of gravy
