No Fail Yorkshire Puddings

A typical english roast is not complete without yorkshire pudding smothered in gravy hmmmmm heaven each Yorkshire pud should be well risen with a dip in the middle to hold the gravy
Ingredients:
for 6-8 yorkshire puddings (muffin tin size)
you want to take 3 eggs, break into a jug
now you want the same amount of flour as the eggs
and the same amount of milk
pinch of salt
2 tbls cold water
Directions:
1. beat the eggs, flour, milk and salt till light and frothy
2. let stand for at least an hour at room temp.
3. using, beef drippings or oil, pop a bit into each muffin pan and into a very hot oven (400F or 200C) till the fat is smoking, about 8min.
4. meanwhile stir batter again while adding 2 tablespoons cold water
5. pour into hot muffin pans up to 2/3 full and pop into hot oven for about 25-30 min or until well risen and golden brown
6. serve with your roast and veg with lashings of gravy
