Nanny's Sweet Potato Souffle

Ingredients:

  • 2 large eggs
  • 3/8 cup butter
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 1 1/2 cups self-rising flour
  • 1 cup pecans

Directions:

  1. Peel baked potatoes and place in a large bowl. Add remaining ingredients and mix well with a mixer until well blended. Transfer to a greased 2 quart dish. Mix all topping ingredients in a separate bowl until crumbly. Sprinkle crumbly mixture on top of dish. Bake at 350 degrees for 30 minutes.
