My Mothers Christmas Pudding

Ingredients:

  • 4 cups breadcrumbs
  • 2 cups sugar
  • 2 cups flour
  • 2 cups butter
  • 1 cup molasses
  • 1 tsp mace
  • 2 cups currants
  • 1/4 cup citron
  • 1/4 cup mixed peel
  • 1 tsp cinnamon
  • 5 eggs

Directions:

  1. Mix all ingredients thoroughly.
  2. Put into prepared cans or molds. My mom uses large coffee tins or baby formula tins. Cover with waxed paper and then foil. Make sure you leave some room at the top for the pudding to rise. Secure with string.
  3. Boil cans in a large pot or pan for 5 hours.
