Ingredients:

  • 1 large apple, cored
  • 2 tbsp honey
  • 2 3/4 cups water
  • 1/2 tsp vanilla
  • 1 large egg
  • 1/2 cup raisins

Directions:

  1. Preheat oven to 350*.
  2. Grease 12 muffin tins.set aside.
  3. In food processor, puree the apple.
  4. Shred carrot with hand shredder.
  5. In a bowl, mix all wet ingredients together and add pureed apple. Mix thoroughly.
  6. Combine dry ingredients.Add wet ingredients and mix thoroughly, scraping sides and bottom of bowl to be sure none of the dry mixture is left.
  7. With an ice cream scoop, fill a muffin cup 3/4 full.
  8. Bake at 350* for approximately 1 hour.
