Mushroom And Sweet Pepper Sandwich

Ingredients:

  • 2 slices rye bread
  • dijonnaise (by the mustard..if you cant find it...do half mayo half dijon)
  • about 1/4 cup mushrooms
  • 1 slice swiss
  • 1 slice cheddar
  • salt and pepper to taste

Directions:

  1. Melt butter in small saute pan over medium heat. Add mushrooms and red peppers and cook until tender about 4 or 5 minutes. Salt and pepper them.
  2. Meanwhile add the dijonnaise to one slice of bread. Put a slice of cheese on each bread to insure the mush. and peppers stay in place. Add the mushrooms and red peppers on cheese. Then close sandwich.
  3. Spread butter on both outer halves of bread. Put in skillet and evenly brown over medium heat on both sides...ENJOY!!
