Mrs. Wolak's Pumpkin Bread

Ingredients:

  • 1 3/4 cup sifted flour
  • 1 1/2 cup sugar
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup oil
  • 2 eggs
  • 1/3 cup water
  • 1 cup pumpkin

Directions:

  1. Preheat oven to 350 degrees
  2. Combine all ingredients and stir until smooth.
  3. Pour into 2 small loaf pans or 1 standard loaf pan, make sure pans are greased well.
  4. Small pans - bake for about 40 minutes
  5. Standard pan - bake 50-60 minutes
  6. It should be done when a toothpick entered into the center comes out clean, and pan sides are free from batter. It should have a nicely rounded top.
  7. Remove from pan and cool on a wire rack
