Mom's Honey Applesauce Cake With Honey Broiler Icing

Ingredients:

  • 1 egg
  • 1 1/2 cups honey
  • 1/2 cup oil
  • 6 cups flour
  • 1/2 tsp clove
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3/4 tsp salt
  • 2 tbsp baking soda
  • 3 cups applesauce
  • 1/2 cup butter
  • 2/3 cup honey
  • 1 tsp cinnamon
  • 1/2 cup walnuts

Directions:

  1. Preheat oven to 350°F.
  2. In a large bowl, beat egg, then mix in honey. Stir in oil.
  3. Sift flour, spices, salt and baking soda together.
  4. Stir dry ingredients alternately with applesauce into wet ingredients. Batter will be stiff.
  5. Pour into a 9x13 cake pan. Bake for 1 hour, or until a skewer poked into cake comes out clean.
  6. Cream butter and honey. Mix in remaining ingredients.
  7. Spread icing on cake when finished baking (no need to cool), and put back in oven.
  8. Broil 3 or 4 minutes until it browns (watch carefully! It can get very dark before you know it!).
